Quiche Recipe

I was shopping the other day and spotted a quiche tin so I said I’d give it a go! Surprisingly this was really easy & quick to make.

Ingredients for the pastry:

  • 5 tbsp cold water
  • 50g butter at room temperature
  • 150g plain flour
  • Ingredients for the filling:
    • 1 thinly sliced onion
      3 rashers
      170ml milk
      2 eggs
      60g grated cheddar cheese
      Pepper
      1 sliced tomato

    What to do:

    • Preheat the oven to 190 degrees Celsius.
    • Mix the flour, butter, and water to make the pastry. Make sure the pastry is soft but not sticky.
    • Roll out the pastry on a floured board and line the quiche tin.
    • Add the rashers, onion, and cheese into the quiche tin. Add the the sliced tomato on top.
    • Mix the eggs, pepper, and milk together and pour over the filling in the quiche tin.
    • Place in oven for 30 minutes until the quiche is a golden brown colour and make sure it is well cooked in the middle.

    You may also add spinach, mushrooms, basil etc. to the quiche. Add in whatever veg you like!

    Banana Bread Recipe

    Today I made this banana bread and it was delicious!

    Here’s the list of ingredients I used:

    • 2 cups (250g) all purpose flour
    • 1/2 cup unsalted butter at room temperature
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoons salt
    • 1/2 teaspoon ground cinnamon
    • 1/2 cup granulated sugar
    • 1/4 cup brown sugar
    • 2 teaspoons vanilla extract
    • 2 large eggs
    • 4 ripe bananas

    You can also add chopped walnuts if you wish.

    What to do:

      In a bowl, mix together the flour, baking soda, bread soda, cinnamon, and salt.
      Using an electric mixer, add the butter, granulated sugar, and brown sugar until light and fluffy.
      Pour in the eggs and vanilla essence along with the mashed banana and give it a good mix!
      Add the wet mix into the dry mix and make sure it is well combined.
      Preheat the oven to 175 Celsius.
      Spray the loaf pan with nonstick cooking spray and fill it with the batter.
      Put into oven for approx 55 minutes and you can cover it with aluminum foil if excess browning occurs.

    Also one last piece of advice, don’t overfill the loaf tin like I did, it will expand when cooking and may rise up a bit too high! 😂

    Red Cliff Lodge Restaurant

    I got a chance to visit the newly managed red cliff lodge restaurant in Spanish Point and I’m so glad I did! My friend and I couldn’t wait to try out the new food which looked delicious in the photos I had seen. On arrival at the restaurant, we were met by the lovely waitress Lauren and the owners Eimear & Chris (The chef, who went out of his way to come out of the kitchen and chat to us! 👏🏽). I had previously visited Chris & Eimear’s last restaurant in Lanzarote so it was such a great surprise to find out they were moving home to Ireland and that their new restaurant is so close to me! 🇮🇪

    We were sat down at a lovely big table which was ideal for us considering how much food we were about to order! There’s a lovely relaxing atmosphere in the restaurant with breathtaking views of the Atlantic Ocean just across the road!

    We visited for Sunday lunch and my first though of the menu was that it was full of choice! They have something to suit everyone and it also included a list of allergens which is great for those who may be allergic to something.

    It was a tough decision to choose my starter but I decided to go with the potato & leek soup. The soup tasted great and was served with a plate of bread and butter which was also delicious.

    Then we moved onto the main course, I ordered the pan fried chicken and my friend ordered the pork belly. The presentation was fantastic and it tasted just as good as it looked. We also got a serving of carrots & potato’s to go with our main course.

    We barely had room left for the dessert but gave it a go anyways! I ordered the chocolate brownie which was served with honeycomb and brown bread ice cream which I had heard so much about so I couldn’t wait to dig in! The brownie was heated and was absolutely delicious, definitely one of the nicest desserts I’ve ever tasted!

    My friend ordered the fudge ice cream sundae and he wasn’t disappointed either.

    I would highly recommend the red cliff lodge restaurant for anyone looking for a top class meal at a very reasonable price. Whether you are a local to Spanish point or visiting the area, it well worth the visit but make sure you book ahead of time to avoid disappointment!     Spicebag Fakeaway

    Hiya, I posted this Spicebag fakeaway tutorial on my Instagram story last week and there was a huge response. It was very nice and very simple to make. I have included the ingredients and instructions below!

    What you’ll need;

    • 2 chicken breasts
    • Salt & pepper
    • Chili flakes
    • 2 potatoes
    • 5 spice seasoning
    • Spice bag seasoning
    • Curry powder
    • Onion
    • Golden breadcrumbs
    • Red & yellow pepper
    • 2 eggs
    • Instructions;
      Peel and cut the potatoes into chip sizes, a few sprays of the cooking oil and into the air fryer for 15 minutes.
      Mix the 5 spice seasoning with the breadcrumbs and leave it in bowl. In a separate bowl, mix the 2 eggs.
      Dip the chicken breast pieces into the egg and breadcrumbs and place on baking tray.
      Place into oven at 200 degrees for 15 minutes.
      Cut the peppers & onion and mix in frying pan using spray oil for a few minutes until soft.
      Add the chili flakes and Spicebag seasoning to the peppers & onion and mix it all up.
      Sprinkle a small bit of salt and pepper into the mix and add the cooked chicken pieces.
      Cover in curry sauce and there you have it!

    Fat free 3in1

    Heya, I love a 3in1 from the Chinese but as I’m following a fitness plan, I won’t be visiting the Chinese any time soon! I decided to make my own, which is just as good and is basically fat free. I started off by getting my ingredients ready:

    1. Boil in the bag basmati rice
    2. Unislim rustic cut chips
    3. Mayflower medium curry sauce mix

    I started by boiling a bag of this rice for 10-12 minutes. I used this basmati rice as it has very low sugars and saturated fat. 0.1g to be exact. While this was cooking, I prepared the chips.

    I used these unislim chips as they also have very low saturated fat content. I placed the chips into the airfryer and set it for 17 minutes. The next thing I did was to cook 2 eggs in a frying pan and then add in the cooked rice and mix it together.

    I cooked the curry by adding 2 tablespoons of powder to a sauce pan and adding enough water until I was happy with the texture of it. This curry tastes even better than the Chinese curry, it has to be tried to be believed. It’s amazing! 😍 Let the curry simmer for a few minutes while placing the rice and chips onto a plate. When you are ready, pour the curry over the rice and chips together, and enjoy! 😍

    Wild Irish seaweed 

    This week, I have a couple of products to try out thanks to Michéal from Wild Irish Seaweed. The first product I tried was the dillisk sprinkles. As you all know by now, I’m in the middle of a lifestyle change, which involves cutting out rubbish foods such as sugar, chocolate etc. I was very excited to try out this dillisk as it is very high in iron and vitamins. This dillisk contains no artificial preservatives or flavourings. Nothing is added or taken away from the great taste. Dillisk has a salty taste, so that makes it the perfect alternative to using salt. I usually cook a stir fry for dinner, I sprinkled some of this in to my stir fry and it was delicious.     The next product I tried out was the seaweed infused face and body oil. This oil is an infusion of irish kelp and coconut oil. I found this fantastic and my mother also finds it great, she has been using it every day since! Simply hold it up and spray it onto your face directly and rub it in or spray onto hands. It’s great for dry skin and leaves your skin with a great glow afterwards. This oil helps to draw out heavy metals from your body as well as containing vitamin B12, which is found in red meat.     The third product which I was given was the seaweed bath. This seaweed bath is very simple to use, and it doesn’t take long to get it set up and ready! The packaging is great and comes with very clear instructions on the back. 


    You simply open the packet, tie the strings around the tap in the bath, put in the stopper, and turn on the water.


    Once the bath is full, open the strings and let the bag submerge in the water. You can keep the seaweed in the bag or open it and let it float around, whichever you prefer. I’m more of a lazy type of person so I kept it in the bag as it was quicker to clean up after! This seaweed bath has many health benefits, including:

    1. Promotes circulation
    2. Lymph circulation 
    3. Supports endocrine system 
    4. Heals surface wounds 
    5. Helps eliminate excess fluid in body tissues

     The fourth and final product I have it the sea salad. I found this my favourite product as it is a mix of five different seaweed and is the perfect addition to a stir fry, chowder, or soup. The seaweed is chopped up into small pieces and the taste is amazing. I will continue to use this product daily and it will help out with my fitness journey!

    Flanagans seafood bar

    Earlier in the week, I was contacted by a member of staff at Flanagans bar about their new seafood bar/restaurant which is now open. Flanagans is located on the Main Street in Lahinch, county Clare. I have often been in Flanagans bar with friends and when I heard about the seafood bar I could not wait to try it out!


    I was invited to visit the restaurant for a taste of their new menu. Myself and my sister Jennifer were looking forward to having our meal. The menu looked fantastic and the staff were so welcoming to us when we arrived.

    We were amazed by the choice of selection on the menu, they had everything! The hardest part was trying to decide what we should order. I ordered the fish and chips, while Jennifer ordered the fresh crab open sandwich, which was fresh crab meat served on homemade brown bread. It looked amazing and we could not wait to dig in🍴


    Our meal was perfect and we thoroughly enjoyed our visit to Flanagans. From start to finish, it was very enjoyable. I love fish and chips, and this was by far the best fish and chips dinner I have ever tasted. The tartar sauce was the perfect dip and the green peas made it even better 😍 The bar is in an ideal location with many visitors visiting for holidays. I would highly recommend a visit to Flanagans for your seafood dinner, you will not regret it!

    Homemade baked crisps

    As most of you who follow me on snapchat will know, I’ve started a new healthy lifestyle. One of the parts of this new change is to cut out crisps and chocolate and items containing high fat and sugar content. Today I baked my own crisps, which are fat free and taste just as good.

    1. 1 washed raw potato
    2. Mandoline slicer
    3. Oven set to 230 degrees
    4. Brown paper
    5. Seasoning

    I washed a raw potato and sliced it in the middle. I then sliced it up using the mandoline slicer to cut nice even slices. Boil the slices for 5 minutes and take them out of the pot. The next thing to do is to dry all the slices and lay them down on the brown paper. Sprinkle a bit of seasoning, I used a bit of salt and pepper. Bake in the oven for 20 minutes 👌🏽

    Homemade spicebag

    I love nothing more than a spicebag for dinner and what better way to enjoy one by making it myself at home. I had seen this spice bag seasoning mix for sale and I could not wait to try it out!

    So firstly, I went to SuperValu to purchase a tub of spice bag seasoning powder for the flavouring.



    The next thing that I got was a red and green pepper and also a banana shallot. I cut up half of each pepper along with half of the shallot and mixed together on a plate.


    I cooked the peppers and shallot in a frying pan on low heat using a spray cooking oil. While that was cooking, I put a handful of chips into the air fryer for 16 minutes. You can make homemade chips for this or whatever type of chips that you prefer.

    The next part was the chicken. Any type of chicken can be used for the spicebag so I decided to use birds eye chicken dippers for mine. I cooked 11 chicken dippers in my fan oven at 190 degrees for 15 minutes. When that was cooked, I took it out of the oven and cut the chicken into smaller pieces.



    The reason I used this chicken is because it already had a batter on it, and to be honest, I just couldn’t be bothered making a batter and cutting the chicken breast myself!

    I put the chicken and the chips all into the frying pan with the peppers and shallot and mixed it all up.


    I sprinkled on the spice bag seasoning into the frying pan and mixed it up. Be careful not to use too much of the seasoning as it has a very strong taste if too much is used. I let it sit for a minute or 2 and then served it onto a plate covered in brown paper.

    I used the brown paper just to make it look better because any time I get a spicebag from the Chinese, it comes served in a brown paper bag.

    The spice bag seasoning mix is available in SuperValu stores throughout Ireland and it will last for ages.

    Mint aero cheesecake 

    I really like cheesecake so when I saw this recipe online I just had to share it with you.

    Ingredients needed:

    1. 3oz melted butter
    2. 12 digestive biscuits
    3. 2 large mint aero bars
    4. 250ml whipping cream
    5. 320g Philadelphia soft cheese Cadbury chocolate flavour
    6. 250g icing sugar

    Instructions:

    1. Crush the digestive biscuits to your preference and slowly add in the melted butter
    2. Line the tin with cling film to make it easier remove the cheesecake when finished
    3. Cover the tin with the crushed biscuit mix
    4. Mix the Philadelphia cheese with the icing sugar
    5. Whip the cream and add it to the Philadelphia and icing sugar
    6. Grate the 2 aero bars
    7. Mix in some of the aero bars and spread the mixture evenly into the tin
    8. Sprinkle the rest of the aero bars on top and leave to set in the fridge overnight

    Now just a little bit of advice – Do not eat much of this as you could possibly gain 3 pounds per slice 😂

    UPDATE: This is my homemade version of the cheesecake 😂😂 Didn’t really go as planned 😂
